Smiling From Heaven

It was a busy weekend. Janice and Ken got into town Thursday afternoon. Janice and I went thru some of Jennifer’s clothes and Janice took some jackets and sweatshirts that fit her. I know that Jennifer would be happy that she took them. Jennifer had a special bond with her three sisters and she loved them all dearly.


This weekend was the Warrior Women of Mesquite second annual cancer walk. This was one reason that Janice and Ken came down to see me on their way to Silver City New Mexico to see their grand kids and babysit them for spring break. For the cancer walk I asked several of my friends that have supported me as I travel down this path that I never thought I would be on to walk in this March in honor of Jennifer and for them to wear a Neuroendocrine cancer shirt that I bought for them. The walk was on Saturday.


The Women Warrior of Mesquite group is mostly breast cancer survivors but the walk and their groups efforts is for all types of cancer. These women have worked their butts off and they have created a non-profit society that is doing a lot of different things to help people in Mesquite with cancer as well as care takers and family members of people with cancer.


There was about 20 of us in the shirts.


I also decided since Janice, Kenn, Elaine and Jim were going to be here that I would have folks over for Corn Beef, cabbage and potatoes ham and cheese sliders with honey mustard for those that did not want/like corn beef, the evening after the walk. It was a early St Patty’s day celebration and celebration of Jennifer’s Dad’s birthday.


So on Friday morning I worked on getting stuff prepped for Saturday. I had to borrow a few things (tables and chairs) from Margot and Allen. Elaine and Jim also brought some tables and chairs up with them. I also borrowed Insta Pots from both of them.


So I cooked up three corn beef’s and then 3 cabbages and carrots and several bags of small potatoes. The insta pot is definitely the way to go in cooking them. I put a onions, couple of cloves of sliced garlic, Guinness beer and beef broth in and cooked them for 85 minutes with a 25 minute wait under pressure, then I took out the corn beef and put a cabbage, bag of potatoes and bag of baby carrots in each pot and cooked those for 5 minutes. I glazed the corn beef by slathering each corn beef with some yellow mustard and brown sugar and then baked them for 25 minutes.


Jennifer would have really enjoyed the weekend especially with two of her three sisters here. I hope I did her proud and that she was smiling up in heaven. Also I found out today that a piece of her was at the walk as Margot had worn a pair of Jennifer’s shoes (they had the same size feet and Margot had taken some of hers shoes last year) during the walk.

Janice and Kenn got on the road to Silver City early this morning, Elaine and Jim headed back to Vegas also this morning. I worked on getting the house cleaned up and then went to a Pickleball Potluck lunch and then played Bocce after that. Then I came home and worked a little bit more on the house.


Tomorrow I have to head up to St George for my annual eye exam.

Joyful But Also Painful Memories

I have written how Jennifer and my wedding was pretty large. We were so blessed to have so many people who came and celebrated that day with us. We were also blessed to receive a bounty of gifts. C
